Our Story

Three generations behind the counter

Jeremy Scavazzo learned this trade the old way, as a kid in his grandfather's award-winning shop, Dotti-Lou Meats & Catering in Tunkhannock, Pennsylvania. His grandfather taught him everything himself: the recipes and seasoning blends, the way you break down a side of beef, the way you sharpen a knife, the way you treat the person across the counter. It was handed straight from grandfather to grandson, and it made Jeremy the third generation of Scavazzo butchers.

That craft never left him, and now we're bringing it home to the Lehigh Valley. The name says what we believe: the cleaver is the trade, honest work done by hand, and gilded is the standard we hold it to. Nothing leaves our counter that we wouldn't put on our own table.

Scavazzo's Gilded Cleaver is a modern take on the shop Jeremy grew up in. Everything the supermarket meat case left behind, a butcher who knows your name, cuts to order, and can tell you exactly how to cook what you're taking home, rebuilt for the way we shop and eat today. Sliced lunch meats for the week, kielbasa and jerky from our own smokehouse, and fresh sausage made from his grandfather's recipes, with a full deli and take-home prepared meals joining the lineup as we grow.

We're a husband-and-wife team, raising our family right here in the valley, and if our little guy has his way, a fourth generation is already in training. We've been fortunate enough to get guidance along the way from Jeremy's grandmother Catherine, who helped run Dotti-Lou for decades. Right now we're swinging hammers, not cleavers, so follow along as the shop takes shape. Then come in for Tuesday's dinner, come back for Sunday's roast. Either way, you'll leave with something good.

Walls came down, floors came up, and the crew showed up ready. The buildout of Scavazzo's Gilded Cleaver is officially underway.

Jeremy Scavazzo

Jeremy is a third-generation butcher who learned the craft the way it's meant to be learned, at his grandfather's side in his award-winning shop, Dotti-Lou Meats & Catering in Tunkhannock, PA. Long before he could see over the counter, he was watching sides of beef broken down by hand and family sausage recipes measured from memory. Today he runs the counter, the smokehouse, and the kitchen, holding every cut and every batch to his grandfather's standard. Ask him what's good this week, or how to cook what you're taking home, that conversation is the whole reason this shop exists.

Owner · Finance

Allison Scavazzo

Allison is a senior corporate finance leader with more than fifteen years in accounting and finance, and that remains her full-time career. Her part in the shop happens behind the scenes: the business plan, the budgets, and the books all carry her fingerprints, built with the same rigor she brings to her day job. It's a simple division of labor, Jeremy handles the meat, Allison handles the math, and it means the craft you see at the counter stands on a business built to last, while Jeremy leads the shop day to day.
